Luscious Veg!

We try to eat veggies raw when we can, but there are some you simply cannot eat raw. No matter how much hummus you slather all over them.

Some of our favorites to cook around here: turnips, Brussels sprouts, and good ol' brown-variety potatoes.

This is how we do it. Where olive oil is called for, I use about third to half less than what's called for, but given that's the first and only olive oil either of us eats all day, we don't feel too bad about it. But where butter is called for, I leave it out and let him add what he wants (we're both kinda fiendish about butter, but mine's non-dairy and he seriously just goes overboard with the stuff and I won't deprive him... not until he turns, like, 36 or 37 or whatever).
